Original and successful is a croquette of Oosterschelde eel with algae mayonnaise. Juicy, almost melting lamb is elevated by a trio of sauces with vadouvan, black garlic, and wild garlic oil, all perfectly balanced. Finally, a beautifully presented tiramisu with hints of tonka bean and the freshness of matcha and raspberries.
